Pomodoro Sauce
I like tomatoes. Because of my Cebuano roots, I loved it when my mum would mix "tamatis" (Cebuano word or "kamatis" in Tagalog) with Asian (red) onion and gingeroot in vinegar to serve as dip. The more sour the better. I think the "tamatis" (Cebuano) and ultimately "kamatis" for that matter, is a corruption of the Spanish word "tomates". "Pomodoro", on the other hand, is Italian.
Which is why when I tasted the fish fillet with pomodoro sauce in Power Plant I felt like I was in paradise. I could feel the texture of the tomato skins and the soursweet taste of the pulp. And the snapper fillet was to die for. He he... Now I'm hungry all of the sudden.
I like my tomato sauce sour with just a hint of (natural) sweetness. Which is why I don't like the way most Pinoys cook spaghetti: sweet with just a hint of sour. But that is another story :D
